Rang des Iles Kids Ingredients: Cocoa beansLe Rang des les (Rank of the Isles) is a farmstead cheese made from the whole milk of Brown Swiss cows. This square shaped soft cheese has a pleasing tenderness and a mixed bloomy rind. An excellent introduction to mixed rind cheeses: Rang des les is fairly mild, with notes of burnt sugar and scalded milk. Pair with an aromatic and flavourful wine, dried fruit, and nuts. Enjoy as a part of a charcuterie board, or melted into a cream sauce.
