Do Xeito Small Sardines in Olive Oil Stirm ChardonnayThese sardines have the peculiarity of their fishing method. They are captured using the Xeito technique, a traditional technique that consists of a net cloth, which the boat drifts loose and captures those sardines as they pass through the net. These are then hooked by the head, thus preventing the product from being bruised and the raw material from being damaged as happens with other fishing methods.
